The city of wines

Discover Baden wine in Freiburg

What makes Freiburg the city of wines? Thanks to the mild temperatures and excellent soils, the surrounding region between the Black Forest and the Vosges mountains is considered one of the best wine-growing areas in Europe. The Romans already utilised this locational advantage: the oldest document about the cultivation of wine on the Tuniberg dates back to 888 A.D. If you would like to know more: The educational wine trail in Freiburg-Opfingen leads you 1.5 kilometres through the vines and provides exciting information about the region's vines and their cultivation on 20 information boards. And if you've acquired a taste for wine, you can have a wine tasting sent to your home from the Freiburg State Winery - they also offer the sustainable "Green Wine Box".

Wineries in Freiburg & Region

No other major city in Germany has such a large wine-growing area as Freiburg. Three of Baden's eight wine-growing regions meet here: Firstly, Breisgau, which begins on the Schlossberg (castle hill) north of the Dreisam river. Then there is the Markgräflerland; the first vines grow around the Jesuit castle on the Schönberg. And finally the Tuniberg growing region, which rises out of the Upper Rhine plain to the west of the city near Munzingen, Tiengen, Opfingen and Waltershofen. The vines that thrive here - and what the region's winegrowers make from them - are as diverse as the growing areas themselves:

Managing Director of the Alte Wache
The Alte Wache on Münsterplatz in Freiburg is a showcase for Baden wines: around 100 Baden wines can be tasted and purchased from us - and we select them all carefully. Our two in-house products, which have become cult drinks, are very popular: The hot "Winter Marie" and the "Kalte Sofie", an iced wine drink for the summer.

5 classics you should try

Baden wines

Hardly any other wine-growing region is as versatile: South Baden produces sweet and sweet white wines such as Scheurebe, Gewürztraminer and Muskateller. There are also semi-dry to dry classics - Gutedel, Pinot Gris, Müller-Thurgau - and Pinot Noir rosé wine. But you will also find strong red wines such as Pinot Noir red wine and Dornfelder. You shouldn't miss out on these five Baden wines:

  • Chasselas
    The "Viertele wine" par excellence
This classic white wine is one of the oldest known grape varieties and is a natural choice for dinner in Freiburg and the region. Growing area: almost exclusively in the Markgräflerland. Flavour: fresh and fruity. Chasselas is mainly vinified dry; it impresses with its minerality and lightness. Goes well with: fish, white meat dishes, cheese fondue, raclette or asparagus.
  • South Baden classic
This very old grape variety is the result of a natural mutation of the Pinot Gris - and a classic white wine from southern Baden. Flavour: High acidity, aromas of citrus fruit, pineapple and quince. When vinified dry, this fresh Pinot Blanc with a complex flavour harmonises well with vegetables and fish. Fuller-flavoured wines go well with lamb and game dishes.
  • The all-rounder from Baden
This grape originated from a mutation of Pinot Noir - and is now one of the most important white grape varieties in Baden. Flavour: Pinot Gris wines are medium-bodied, rather low in acidity and usually dry. Depending on the vinification method, the wine tastes of pineapple, citrus fruit and sultanas; however, there are also fruity-sweet Spätlese and noble sweet Auslese wines. An all-rounder that tastes good with any dish.
  • A fresh & aromatic summer wine
Müller-Thurgau, also known as Rivaner, is vinified semi-dry and dry. It is one of the most common and high-yielding vines in Baden. Flavour: This fresh and aromatic white wine is the ideal summer wine - and easy to drink thanks to its mild acidity. The floral bouquet is sometimes more, sometimes less pronounced; the wine also has a slight muscat flavour. It is often served with light fish dishes or crisp salads.
  • The sophisticated red wine
Pinot Noir is the most versatile grape variety in Baden. Its vines have been native here for over 1000 years. Flavour: full-bodied and velvety; Pinot Noir is considered the most demanding red wine variety grown in Germany. Pinot Noir typically smells of dark fruits such as cherry and blackcurrant. Ageing: Pinot Noir wines, which are aged in oak barrels and have more tannins and less acidity, have become increasingly popular in recent years; they develop their own vanilla flavours. Only the best grapes are used for these wines. Pinot Noir goes well with meat and game dishes.
