Freiburg has a big heart for indulgence and connoisseurs. So it's no wonder that four starred restaurants offer outstanding cuisine here. The top chefs in each of them swear by the quality of the ingredients from Freiburg, Breisgau, Kaiserstuhl and Markgräflerland. Chef Martin Fauster sets Austrian accents in the Zur Wolfshöhle restaurant, while Federico Campolattano cooks in the Eichhalde with a passion for his homeland of southern Italy - and even hands diners headphones with their grilled octopus, so that the sound of Naples is added to the flavour. Freiburg's proximity to France is reflected in the menu at the Zirbelstube in the Colombi Hotel, which has been an icon of French haute cuisine in Germany for decades. The Jacobi offers innovative local cuisine for the Green City - and the latest exciting addition to Freiburg's starred gastronomy is the Hawara: Japanese-inspired cuisine with ingredients from the restaurant's own vegetable garden.

Eichhalde

"The world belongs to those who know how to savour it" - this is written in Italian on the wall of Restaurant Eichhalde. Federico Campolattano cooks here with finesse, passion and a great love for his homeland of southern Italy. He opened the restaurant together with his wife Valentina Tito in 2019, and Eichhalde was awarded its first Michelin star in 2023. One of the restaurant's trademarks is the purist "modern menu" with five to nine courses. Nice extra: the wonderful pasta sauces are also available as a souvenir to take home - a piece of Italy to go.

Colombi Restaurant Zirbelstube

It is a classic on the fine dining scene: the Zirbelstube in the Colombi Hotel is known far beyond Freiburg's borders for its elegant French cuisine. The restaurant keeps up with the times and offers gourmets not only specialities such as Breton scallops or fine entrecôte, but also a completely vegan menu option. The spacious dining room, which gives the starred restaurant its name, is as stylish as it is cosy: The walls and ceilings are completely clad in light-coloured Swiss stone pine.

Concentrating on the essentials - for this alone, the Wolfshöhle has earned its star. For Martin Fauster, excellent ingredients are the key to success. The head chef and owner of the Wolfshöhle comes from Styria, and the cuisine of his homeland still characterises him today. This is evident not only in the Styrian fried chicken on the menu, but also in the way Martin Fauster focuses on the flavour of each individual product. His dishes can also be enjoyed outside on the terrace in summer, either as a set menu or à la carte - in Freiburg's prime location on the street "Konviktstraße".

Regional cuisine rethought

Jacobi

The concept is innovative and has already won over many gourmets since it was founded at the end of 2022: a modern tasting menu with seven to nine courses awaits you at Jacobi; the individual parts consist of exciting triads such as "catfish, carrot, tandoori". The restaurant is run by a team of five under the direction of head chef Christoph Kaiser. Regionality is the restaurant's credo, which is why it was awarded the green star for sustainable gastronomy by the Michelin Guide 2024 in addition to the red star. The atmosphere is warm and informal, and children are also expressly welcome.

Freiburg's newcomer

Hawara

Nicolai Heuer and Yannik Spielmann have known each other since kindergarten and used to run Hawara as a pop-up restaurant. Since 2024, it has been located in the beautiful old villa in Wiehre - and has had two Michelin stars since 2025: a red Michelin star for its Japanese-inspired cuisine and a green one for its sustainability concept; the ingredients often come from the restaurant's own garden. Hawara offers set menu cuisine from Thursdays to Saturdays, with a smaller carte blanche menu and a bistro menu on Wednesdays. Incidentally, "Hawara" is the Viennese dialect term for a good mate - which suits the pleasantly relaxed atmosphere.
