Freiburg's favourite sausage

Long and crisp

35 centimetres is a proud length for a bratwurst. But Freiburg's Lange Rote is not only outstanding because it is three times as long as the bun in which it is served. Delicately pink on the inside, crispy and lightly browned on the outside, it comes fresh from the grill or pan at the Münstermarkt (cathedral market), traditionally served with fried onions. The baker Josef Föhrenbach was already serving the Lange Rote in 1949 as a "market sausage", at that time still boiled in a kettle. Two years later, he put the sausage on the grill - and gave the people of Freiburg their favourite sausage.

Speciality with a bite

Sausage Lange Rote

With onions or without? That's the question with Freiburg's Langer Roter, the classic among the city's hearty specialities. Its inventor, a master baker named Josef Föhrenbach, fried the onions together with the sausage to add even more flavour. But the Lange Rote also has plenty of flavour on its own: Made from thin, well-seasoned pork, it is grilled without casing; its flavour is delicate and smoky, its aroma irresistible.

For a long time, it was taboo for Freiburg residents to bend the sausage so that it would fit better in a bread roll. Nowadays, tradition is taken less seriously and the Lange Rote can also be placed twice in the roll. But if you want to stay true to the original, the best place to enjoy the sausage is at the Münstermarkt (cathedral market), where a good handful of stalls offer Freiburg's favourite sausage. Vegetarians will also find a tofu version here - albeit not quite as long.

75 years of Sausage "Lange Rote

The long red from the cooking pot? Unthinkable today, but that's how it all began: Master baker Josef Föhrenbach sold boiled sausage at his stall at the Münstermarkt (cathedral market) in December 1949. Now, 75 years later, the Lange Rote has long since come off the grill and is a culinary symbol of the city. It is produced with great passion and a sense of tradition and tastes best where it was born: at Freiburg's Münstermarkt (cathedral market).
