Wines that grow on volcanic soils are characterized by a special minerality and structure. The volcanic deposits store heat well and give the vines an early, intensive growth pattern. Typical aromas range from smoky, graphite notes to mineral hints and spicy, peppery nuances. Due to heat storage, many varieties ripen longer, retain fresh acidity and often show strong tannins. Regions such as the Kaiserstuhl, parts of Italy and other volcanic areas offer special terroirs that give wines depth, complexity and a distinctive minerality.
