This "new wine," which is also called “Federweisser” or “Federroter”, is still at the beginning of the fermentation process and therefore provides a tingly light refreshment for autumn. If you would like to take a bottle of wine back home with you, in the autumn you will find friendly vintners at the stalls in the Cathedral Market who would be happy to sell you a liter from their big canisters. But be sure not to close the bottle too tightly! Because of the continuous fermentation, the new wine must be allowed to breathe. If the container is tightly sealed, it will burst.
